The santoku knife is the Japanese equivalent of the Western chef's knife, the gyutou. The word santoku means "three skills." It can be used for meat, fish, and vegetables. This versatility makes it one of the most popular types of knives in Japanese households. The knife is slightly thinner and shorter than the gyutou. The edge is straighter than the gyutou knife, making it a little harder to chop herbs with, but much easier to make thin slices with. Those with smaller hands will appreciate the slightly lighter weight and easier handling of the knife.
